Gluten Free Banana Pancakes

You don’t need enriched flour or oatmeal to make great tasting pancakes! Try this yummy (and healthy) gluten free banana pancake recipe and thank me later.

Ingredients:

  • 3 egg whites
  • 1 whole free range egg
  • 1 large banana
  • 1/4 tsp cinnamon
  • 1 packet stevia or splenda
  • 1 tsp vanilla extract
  • pinch of baking powder

Combine ingredients in a blender and liquify.

Pre-heat pan on medium heat.

Cook for 2-3 minutes per side.

Boom – one large pancake ready to devour! Alternatively, you can opt to ladel it into several smaller flapjacks. Your call.

Double (or triple) the recipe if you’ve got lots of mouths to feed!
