Cooking Dinner Tonight? Try This

What you’ll need:

  • Prawns
  • 1 cup diced roma tomatoes
  • 1/2 cup chopped avocado
  • 2 tbsp chopped red onion
  • 1 cup red/yellow/green peppers 
  • 1-2 cups bean sprouts
  • 1 tbsp EVOO or coconut oil (to sautee shrimp)
  • 1 tsp chopped garlic
  • 2-4 large lettuce leaves
  • 2-4 large tortillas (optional)
  • 1/3 cup chopped feta (optional)

    1. Chop your veggies, including avocado (not pictured)

        2. Add olive oil or coconut oil to pan and grill shrimp on medium heat until pink, turning over occasionally.

        3. Add the chopped veggies to pan, plus the garlic, feta, bean sprouts, and some salt & pepper to taste. Simmer on low heat.

         4. Add complete mixture to a large lettuce wrap or two (tortilla shells can be used if your carb needs allow for it)
